Maine Strawberry Shortcake

Ingredients
- 8 cups strawberries, stemmed and quartered
- 1/3 cup sugar
- 1/4 cup sugar
- 3 cups all-purpose flour
- 4 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 cup Kate's Buttermilk
- 3/4 cups Kate's Unsalted Butter
- Whipped cream as desired
Instructions
- Mix quartered strawberries and 1/4 cup sugar together in a bowl, and allow to rest about 30 minutes.
- Preheat the over to 425 degrees F
- Cover a baking pan with parchment paper
- Mix together dry ingredients (flour, baking powder, baking soda, 1/3 cup sugar, and salt) in a mixing bowl.
- Cut in refrigerated butter until the mixture appears as large crumbs.
- Stir in Kate's Buttermilk until the flour mixture is moist.
- Place small scoops of dough (roughly 1/3 cup each) about 2 inches apart on the parchment paper covered baking pan.
- (Optional) Sprinkle sugar over the top of the dough.
- Place dough in the oven and bake 15 to 20 minutes, or until golden brown.
- Serve reserved strawberries over the shortcake. Add whipped cream as desired.
